Prodigal Cup Of Excellence Honduras #9 Itacayo Geisha ESPRESSO - Anaerobic Washed

This is Itacayo, Cup of Excellence 2025, “Exotic” Category, #9. This is our second offering from the 2025 Honduras auction. Ripe cherry juice, vivid rhubarb, and a creaminess make this coffee a star. This year the “Exotic” category primarily consisted of Geisha coffees, which are less common than Pacas, along with a Pacamara, an SL-28, and a Maracaturra. We are also offering this coffee in a box set with our “Traditional” category winner, #10, Las Acacias!

Angel’s 3-hectare farm, Itacayo, in the renowned Santa Bárbara region of Honduras, is planted with 70% Pacas and 30% Geisha. This COE-winning lot was processed using a 48/48 anaerobic method. The whole cherries were first anaerobically fermented for 48 hours. After depulping, the beans, now without cherries and covered in parchment, were anaerobically fermented for an additional 48 hours. After fermentation, the parchment was rinsed four times. The coffee dried for 18 days in a solar dryer, with hand sorting to remove defects.

Angel is a third-generation coffee farmer and has been processing coffee at the San Vicente mill since he was young. In 2007, he bought his first property, the well-known La Colmena, and after just two years, he was producing specialty coffee there. At Itacayo, he harvested his first crop in 2021, and after only these few years, he has produced a COE-winning cherry from this farm. We are proud to share his work with you here.
